Venison

All the venison comes from our own home-reared herd of red deer. The deer live outside all year round and their grass diet is supplemented with hay and silage in the cold winter months.

Venison appears on the specials menu as and when we cull the adolescent stags.
Culling prevents in-breeding and also prevents fights between the stags as they begin to assert their position in the herd.

Venison has a very distinct gamey flavour. You will either love it or hate it.
